Vegetarian Lasagna Recipe with Broccoli & Spinach
Lasagna is a classic Italian dish, and it is especially delicious when made with fresh vegetables like broccoli and spinach. This vegetarian lasagna recipe is a great way to enjoy the classic dish without the need for meat. It is easy to make and full of flavor, making it a great choice for a weeknight dinner or a special occasion.
Ingredients:
- 1 package lasagna noodles
- 1 large head of broccoli, chopped
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 cups ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 2 cups spinach leaves
- 1 jar of marinara sauce (about 24 oz)
- 1 cup shredded mozzarella cheese
Instructions:
- Preheat oven to 350°F (175°C).
- Bring a large pot of salted water to a boil over high heat. Add the lasagna noodles and cook according to package instructions.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until the onion is softened, about 5 minutes.
- Add the broccoli and cook until tender, about 5 minutes more. Remove from the heat and set aside.
- In a medium bowl, combine the ricotta, Parmesan, parsley, salt, pepper, oregano, and basil. Stir in the spinach and the sautéed broccoli and onion.
- Spread 1/2 cup of the marinara sauce in the bottom of a 9x13-inch baking dish. Arrange 3 cooked lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles and top with 1/2 cup of the marinara sauce. Repeat with 3 more noodles, the remaining ricotta mixture, and 1/2 cup of the marinara sauce.
- Top with the remaining 3 noodles and spread the remaining marinara sauce over the top. Sprinkle with the mozzarella cheese. Cover the dish with foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
- Let cool for 10 minutes before serving.
