Vegetarian Lasagna Recipe with Broccoli & Spinach

Lasagna is a classic Italian dish, and it is especially delicious when made with fresh vegetables like broccoli and spinach. This vegetarian lasagna recipe is a great way to enjoy the classic dish without the need for meat. It is easy to make and full of flavor, making it a great choice for a weeknight dinner or a special occasion.

Ingredients:

  • 1 package lasagna noodles
  • 1 large head of broccoli, chopped
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 cups ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 2 cups spinach leaves
  • 1 jar of marinara sauce (about 24 oz)
  • 1 cup shredded mozzarella cheese

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Bring a large pot of salted water to a boil over high heat. Add the lasagna noodles and cook according to package instructions.
  3. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until the onion is softened, about 5 minutes.
  4. Add the broccoli and cook until tender, about 5 minutes more. Remove from the heat and set aside.
  5. In a medium bowl, combine the ricotta, Parmesan, parsley, salt, pepper, oregano, and basil. Stir in the spinach and the sautéed broccoli and onion.
  6. Spread 1/2 cup of the marinara sauce in the bottom of a 9x13-inch baking dish. Arrange 3 cooked lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles and top with 1/2 cup of the marinara sauce. Repeat with 3 more noodles, the remaining ricotta mixture, and 1/2 cup of the marinara sauce.
  7. Top with the remaining 3 noodles and spread the remaining marinara sauce over the top. Sprinkle with the mozzarella cheese. Cover the dish with foil.
  8. Bake for 30 minutes, then remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  9. Let cool for 10 minutes before serving.
